A lovely spiced butter which is perfect for salads or to cook meat.
Ingredients
- Unsalted butter - 250g
- Black pepper
- Lemon zest
- Salt
- 1 clove of garlic, grated finely
- 1 tsp thyme leaves, very finely chopped
- Pinch of chilli powder
- Pinch of ground mace
Method
- Clarify the butter by melting it in a pan on a low heat and skim off any white from the top, keep doing this until the butter becomes clear.
- Add the garlic and sizzle for a minute, don't let the garlic go brown
- Take the frying pan off the heat and add the lemon zest and thyme
- Stir for a few seconds, then add the spices and salt.
- Pot up and once cool place in fridge. This should keep in the fridge for two weeks, but use within two days once opened.
