Classic Fried Rice

Ingredients

  1. 2 cups cooked, chilled white or brown rice
  2. 1 cup chopped yellow onion
  3. 1/3 cup thinly sliced scallions
  4. 1 1/2 cups peas and carrots
  5. 1 large egg, beaten
  6. 1 tablespoon vegetable oil
  7. 2 teaspoons rice wine (also called mirin)
  8. 1 tablespoon water
  9. 1 1/2 tablespoons soy sauce
  10. 1/8 teaspoon pepper

Method

  • Stir together the rice wine, water, soy sauce, pepper and egg.  Set aside.
  • Heat the vegetable oil in a large skillet or wok on medium high heat.  Add the onions and scallions to the oil and saute until the onions are translucent.
  • Add chilled rice, peas and carrots.  Stir until just warmed.
  • Drizzle the egg/soy sauce mixture over the fried rice, stirring constantly.  Continue stirring until egg is cooked and the rice is completely heated.  This should take approximately 6 to 8 minutes.  Serve immediately.
