Classic Fried Rice
Ingredients
- 2 cups cooked, chilled white or brown rice
- 1 cup chopped yellow onion
- 1/3 cup thinly sliced scallions
- 1 1/2 cups peas and carrots
- 1 large egg, beaten
- 1 tablespoon vegetable oil
- 2 teaspoons rice wine (also called mirin)
- 1 tablespoon water
- 1 1/2 tablespoons soy sauce
- 1/8 teaspoon pepper
Method
- Stir together the rice wine, water, soy sauce, pepper and egg. Set aside.
- Heat the vegetable oil in a large skillet or wok on medium high heat. Add the onions and scallions to the oil and saute until the onions are translucent.
- Add chilled rice, peas and carrots. Stir until just warmed.
- Drizzle the egg/soy sauce mixture over the fried rice, stirring constantly. Continue stirring until egg is cooked and the rice is completely heated. This should take approximately 6 to 8 minutes. Serve immediately.
